Italian-Style Ground Beef and Tomato Tacos with Garlic and Herbs

Put away your passports: tonight Italy and Mexico meet somewhere between the spice rack and the stovetop. These tacos flip the script, layering classic Italian aromatics and flavors into a playful taco format.

- 01Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking up any clumps, until browned, about 5 minutes.
- 02Add chopped onion and cook until softened, 2 to 3 minutes.
- 03Stir in minced garlic and cook until fragrant, about 30 seconds.
- 04Add diced tomatoes, crushed red pepper flakes, dried oregano, dried basil, salt, and pepper. Stir to combine and bring to a simmer.
- 05Reduce heat to medium. Cook, stirring occasionally, until the tomatoes break down and the mixture thickens, about 8 minutes.
- 06Stir in balsamic vinegar and simmer for 1 minute more.
- 07Taste and adjust salt or pepper if needed. Remove from heat.
- 08Warm corn taco shells according to package instructions.
- 09Fill each taco shell with the beef and tomato mixture. Top with grated Parmesan and chopped parsley. Serve immediately.
