    Line a plate with paper towels. Heat the olive oil in a small skillet over medium heat. When hot, add the thinly sliced garlic in a single layer and fry for 2–3 minutes until golden and crisp, stirring occasionally. Remove the garlic chips with a slotted spoon to the plate to drain.

    Reserve 1 tablespoon of the garlic-infused oil from the skillet for drizzling over the finished salsa. Let the rest cool to room temperature.

    In a medium mixing bowl, combine the diced avocado, finely chopped onion, chopped cilantro, minced jalapeño, lemon zest, and all the lemon juice.

    Add the sea salt and black pepper. Stir gently to combine, trying not to mash the avocado.

    Let the salsa sit for 10 minutes at room temperature to let flavors mingle. The acid will also keep the avocado from browning.

    Just before serving, gently stir in half the garlic chips, then transfer the salsa to a serving bowl. Drizzle with the reserved garlic oil.

    Top with the remaining garlic chips and a little extra cilantro if desired. Serve immediately with whole-grain crackers.
