- 01Preheat your oven to 400°F with a rack in the center.
- 02Bring a large pot of well-salted water to a boil and cook the pasta for 2 minutes less than package instructions for al dente. Drain and set aside.
- 03Meanwhile, heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the diced onion and sauté until translucent and just beginning to caramelize, about 5 minutes.
- 04Add the minced garlic and stir constantly for 1 minute until fragrant.
- 05Stir in the diced fresh tomatoes, oregano, thyme, red pepper flakes, kosher salt, and black pepper. Simmer for 7 minutes, occasionally mashing the tomatoes, until they break down and the sauce has thickened slightly.
- 06Add the drained pasta to the skillet and toss until evenly coated with the tomato mixture.
- 07Sprinkle the mozzarella and Parmigiano Reggiano evenly over the top.
- 08Transfer the skillet to the oven and bake uncovered for 15 minutes, until the cheese is golden and bubbling.
- 09Remove from the oven and let the casserole rest for 5 minutes. Sprinkle with fresh basil before serving.
