Instructions

  1. 01
Preheat your oven to 400°F with a rack in the center.
  2. 02
Bring a large pot of well-salted water to a boil and cook the pasta for 2 minutes less than package instructions for al dente. Drain and set aside.
  3. 03
Meanwhile, heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the diced onion and sauté until translucent and just beginning to caramelize, about 5 minutes.
  4. 04
Add the minced garlic and stir constantly for 1 minute until fragrant.
  5. 05
Stir in the diced fresh tomatoes, oregano, thyme, red pepper flakes, kosher salt, and black pepper. Simmer for 7 minutes, occasionally mashing the tomatoes, until they break down and the sauce has thickened slightly.
  6. 06
Add the drained pasta to the skillet and toss until evenly coated with the tomato mixture.
  7. 07
Sprinkle the mozzarella and Parmigiano Reggiano evenly over the top.
  8. 08
Transfer the skillet to the oven and bake uncovered for 15 minutes, until the cheese is golden and bubbling.
  9. 09
Remove from the oven and let the casserole rest for 5 minutes. Sprinkle with fresh basil before serving.
