Taking its cue from sunny Mediterranean kitchens, this one-pan dinner delivers juicy chicken and vibrant broccoli brightened with a punch of fresh lemon. Along the way, you’ll pick up the art of pan sauce wizardry and why broccoli loves a quick steam.

    Pat chicken pieces dry with paper towels and season all over with salt and black pepper.

    Heat 2 tbsp olive oil in a large skillet over medium-high. Add chicken in a single layer and sear until golden and just cooked through, about 5 minutes per side. Transfer chicken to a plate.

    Lower heat to medium. Add remaining 1 tbsp olive oil, then garlic and oregano. Sauté just until fragrant, about 30 seconds.

    Add broccoli florets and toss to coat in the garlicky oil. Pour in chicken broth and cover. Steam until broccoli is bright green and crisp-tender, 4–5 minutes. Uncover and let any extra liquid evaporate.

    Return chicken (and any juices) to the pan. Add lemon zest, lemon juice, and red pepper flakes. Toss everything together and cook 1–2 minutes to meld the flavors.

    Turn off heat and stir in butter until melted for a glossy, restaurant-style finish.

    Sprinkle with chopped parsley. Taste and adjust seasoning with salt and more pepper as needed.
