Taking its cue from sunny Mediterranean kitchens, this one-pan dinner delivers juicy chicken and vibrant broccoli brightened with a punch of fresh lemon. Along the way, you’ll pick up the art of pan sauce wizardry and why broccoli loves a quick steam.

- 01Pat chicken pieces dry with paper towels and season all over with salt and black pepper.
- 02Heat 2 tbsp olive oil in a large skillet over medium-high. Add chicken in a single layer and sear until golden and just cooked through, about 5 minutes per side. Transfer chicken to a plate.
- 03Lower heat to medium. Add remaining 1 tbsp olive oil, then garlic and oregano. Sauté just until fragrant, about 30 seconds.
- 04Add broccoli florets and toss to coat in the garlicky oil. Pour in chicken broth and cover. Steam until broccoli is bright green and crisp-tender, 4–5 minutes. Uncover and let any extra liquid evaporate.
- 05Return chicken (and any juices) to the pan. Add lemon zest, lemon juice, and red pepper flakes. Toss everything together and cook 1–2 minutes to meld the flavors.
- 06Turn off heat and stir in butter until melted for a glossy, restaurant-style finish.
- 07Sprinkle with chopped parsley. Taste and adjust seasoning with salt and more pepper as needed.
- 08Serve hot, making sure everyone gets plenty of sauce and veg action.
