Herb's take
We're fusing Mediterranean flatbread tradition with a smoky American twist: ground beef meets caramelized onions, but the kicker is a BBQ sauce glaze that pulls it all together. Get ready to caramelize fast and bake even faster, dinner will be ready before you can say 'Maillard reaction.'

Instructions
- 01Preheat the oven to 450°F. Line a baking sheet with parchment or foil.
- 02Heat 1 tablespoon of olive oil in a large skillet over medium-high. Add the sliced onion and cook, stirring frequently, until deep golden and jammy, about 6-7 minutes.
- 03Push onions to the side and add remaining 1 tablespoon olive oil. Add ground beef, breaking it up with a spatula. Cook until mostly browned, about 3 minutes.
- 04Stir in garlic, smoked paprika, and cumin. Cook 1 minute, until fragrant.
- 05Season beef and onion mixture with kosher salt and black pepper. Cook, stirring, until beef is cooked through and spices are bloomed, another 2 minutes.
- 06Lay the naan or flatbread on the prepared baking sheet. Evenly top each with the hot beef and onion mixture.
- 07Drizzle 2 tablespoons of BBQ sauce over the beef topping, then swirl with a spoon for even coverage.
- 08Bake flatbreads in the hot oven until edges are crisp and topping is bubbling, 6-8 minutes.
- 09Remove from oven and immediately drizzle each flatbread with the remaining BBQ sauce. Sprinkle generously with chopped parsley.
- 10Slice into wedges and serve hot, optionally with a side salad or extra sauce for dunking.
