    In a small bowl, whisk together the oyster sauce, soy sauce, Shaoxing wine, sugar, cornstarch, and water until smooth. Set aside.

    Heat a wok or large nonstick skillet over high heat until just starting to smoke. Add canola oil and swirl to coat.

    Toss in the sliced onions and stir-fry for 1 minute until just translucent at the edges.

    Add the garlic and ginger, stir-frying for another 30 seconds until fragrant.

    Crumble in the ground beef. Stir-fry, breaking it up with a spatula, until mostly browned with just a hint of pink remaining, about 3 minutes.

    Give your sauce another stir (the cornstarch likes to settle) and pour it into the pan. Toss with the beef and onions, stirring constantly, until the sauce thickens and coats everything in a glossy glaze, 1 to 2 minutes.

    Taste and season with a pinch of salt or extra soy sauce if needed. Scatter scallions over the top.

    Serve immediately over cooked white rice.
