No-Bake Oatmeal and Peanut Butter Breakfast Bars with Dried Fruit and Honey

This American-inspired grab-and-go breakfast turns oats and peanut butter into a snack so sturdy it almost deserves a permit. You’ll master the art of binding chewy, toothsome bars without ever turning on the oven (and learn why honey is nature’s original culinary glue).

- 01Line an 8x8-inch baking pan with parchment paper, leaving enough overhang to lift the bars out later.
- 02In a large mixing bowl, combine the rolled oats, dried cranberries, dried apricots, and mini chocolate chips.
- 03In a small saucepan over low heat, stir together the peanut butter and honey until smooth and just warm. Remove from heat and stir in vanilla extract and sea salt.
- 04Pour the peanut butter-honey mixture over the oat mixture. Stir with a sturdy spatula until everything is evenly coated and the mix becomes thick and cohesive.
- 05Transfer the mixture to the lined pan. Press down firmly with the back of a spatula, or your (clean) hands, to make an even, compact layer.
- 06Chill in the refrigerator for at least 2 hours, or until fully set.
- 07Lift the bars out of the pan using the parchment overhang. Slice into 8 rectangles (or 4 jumbo bars, if you’re channeling peak breakfast ambition). Store in an airtight container in the fridge up to 1 week.
