Instructions

  1. 01
Line an 8x8 inch pan with parchment, leaving overhang for easy removal.
  2. 02
In a medium bowl, combine the golden grahams cereal and crushed nilla wafers.
  3. 03
Melt the coconut oil in the microwave or on the stovetop until fully liquid.
  4. 04
Pour the coconut oil over the cereal and wafer mixture. Stir until everything is well coated. Press half of this mixture firmly into the prepared pan to form an even base.
  5. 05
Chop the dry roasted peanuts, reserving a tablespoon for topping.
  6. 06
In a separate bowl, whip the cold heavy cream to stiff peaks using a hand mixer or whisk.
  7. 07
Fold the powdered sugar and chopped peanuts (except for reserved topping) into the whipped cream until combined.
  8. 08
Spread the peanut cream layer over the pressed cereal base evenly, smoothing the top.
  9. 09
Sprinkle the remaining cereal-wafer mixture over the cream layer, pressing gently to adhere.
  10. 10
Scatter the reserved chopped peanuts over the top for a little extra crunch and visual appeal.
  11. 11
Cover and chill the pan in the refrigerator for at least 2 hours, or until bars are set and sliceable.
  12. 12
Lift out using parchment, slice into bars, and serve cold.
