- 01Line an 8x8 inch pan with parchment, leaving overhang for easy removal.
- 02In a medium bowl, combine the golden grahams cereal and crushed nilla wafers.
- 03Melt the coconut oil in the microwave or on the stovetop until fully liquid.
- 04Pour the coconut oil over the cereal and wafer mixture. Stir until everything is well coated. Press half of this mixture firmly into the prepared pan to form an even base.
- 05Chop the dry roasted peanuts, reserving a tablespoon for topping.
- 06In a separate bowl, whip the cold heavy cream to stiff peaks using a hand mixer or whisk.
- 07Fold the powdered sugar and chopped peanuts (except for reserved topping) into the whipped cream until combined.
- 08Spread the peanut cream layer over the pressed cereal base evenly, smoothing the top.
- 09Sprinkle the remaining cereal-wafer mixture over the cream layer, pressing gently to adhere.
- 10Scatter the reserved chopped peanuts over the top for a little extra crunch and visual appeal.
- 11Cover and chill the pan in the refrigerator for at least 2 hours, or until bars are set and sliceable.
- 12Lift out using parchment, slice into bars, and serve cold.
