- 01Heat the olive oil in a large high-sided skillet over medium-high heat. Add the ground beef and cook, breaking up with a spatula, until well browned, about 4 minutes.
- 02Add the chopped onion and cook until translucent, about 3 minutes. Stir in the minced garlic and sauté for 30 seconds until fragrant.
- 03Sprinkle in the smoked paprika and stir to coat the beef and onions.
- 04Pour in the dry pasta, then add the beef broth and stir to combine, scraping up any browned bits from the bottom of the pan.
- 05Bring to a gentle boil, then reduce heat to medium. Simmer uncovered, stirring occasionally, until the pasta is just al dente and most of the liquid is absorbed, 10 to 12 minutes.
- 06Stir in the bbq sauce and simmer for 2 minutes to blend the flavors.
- 07Turn off the heat. Sprinkle the shredded cheddar cheese evenly over the top, cover the pan, and let sit for 2 minutes to melt.
- 08Garnish with chopped parsley and season with salt and pepper to taste before serving.
