Herb's take

Inspired by Italian antipasti, these green bean bundles get a flavor boost from garlic-infused butter and a blizzard of grated parmesan. You'll learn how to blanch for bright color and why garlic blooms best in butter, not oil, a true science-meets-snack moment.

Instructions

  1. 01
Preheat your oven to 425 F. Line a baking sheet with parchment paper.
  2. 02
Bring a large pot of water to a boil. Add the green beans and blanch for 2 minutes until bright green, then transfer immediately to a bowl of ice water to stop the cooking. Drain and pat dry thoroughly.
  3. 03
Melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
  4. 04
Toss the blanched green beans in the garlic butter to coat evenly.
  5. 05
Divide the green beans into 8 bundles (about 8-10 beans per bundle). Using kitchen twine or a blanched chive, tie each bundle in the center to hold together. Place bundles seam-side down on the prepared baking sheet.
  6. 06
Sprinkle the bundles generously with the grated parmesan.
  7. 07
Roast the bundles for 10-12 minutes until the cheese is melty and golden and the beans are just tender.
  8. 08
Remove from the oven. Let sit for 2 minutes before transferring to a platter. Season with salt and pepper to taste, snip off the twine, and serve.
