- 01Preheat your oven to 425 F. Line a baking sheet with parchment paper.
- 02Bring a large pot of water to a boil. Add the green beans and blanch for 2 minutes until bright green, then transfer immediately to a bowl of ice water to stop the cooking. Drain and pat dry thoroughly.
- 03Melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
- 04Toss the blanched green beans in the garlic butter to coat evenly.
- 05Divide the green beans into 8 bundles (about 8-10 beans per bundle). Using kitchen twine or a blanched chive, tie each bundle in the center to hold together. Place bundles seam-side down on the prepared baking sheet.
- 06Sprinkle the bundles generously with the grated parmesan.
- 07Roast the bundles for 10-12 minutes until the cheese is melty and golden and the beans are just tender.
- 08Remove from the oven. Let sit for 2 minutes before transferring to a platter. Season with salt and pepper to taste, snip off the twine, and serve.
