Parmesan Butter Scramble for Dinner

Who says scrambled eggs are just for breakfast? This Italian-inspired scramble uses parmesan and lots of butter for a rich, dinner-worthy plate, plus a few nerdy tricks for maximum fluff.

- 01Crack all eggs into a mixing bowl. Add salt and pepper, then whisk vigorously until completely uniform and slightly frothy.
- 02Heat a large nonstick skillet over medium-low. Add olive oil and 3 tablespoons of the butter, letting the butter melt fully but not brown.
- 03Pour in the eggs. Let them sit undisturbed for 20 seconds, then gently stir with a spatula, sweeping the edges toward the center. Repeat every 15 seconds until mostly set but still creamy and loose, about 3-5 minutes.
- 04Remove skillet from the heat. Immediately sprinkle in 3/4 cup of the parmesan and the remaining 1 tablespoon butter. Stir gently until the cheese melts and eggs look silky.
- 05Taste and adjust salt or pepper if needed. Plate the scramble and top with the remaining parmesan.
- 06Serve hot, ideally with crusty bread or a green salad, or both.
