- 01In a large bowl, whisk together 1/2 cup parsley, zest and juice of 1 lemon, 3 tbsp olive oil, 2 cloves minced garlic, smoked paprika, dried oregano, honey, ground cumin, 1 1/2 tsp kosher salt, and 1 tsp black pepper.
- 02Add the chicken pieces to the marinade. Toss until evenly coated. Let sit at room temperature for 20 minutes while you prep the grill.
- 03If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
- 04Meanwhile, make the parsley-lemon sauce: In a food processor, combine remaining 1/2 cup parsley, zest and juice of the second lemon, 2 tbsp olive oil, remaining 2 cloves garlic, 1/2 tsp salt, 1/2 tsp black pepper, red pepper flakes, and 2 tbsp water. Process until smooth but still vibrant.
- 05Preheat a grill or grill pan to medium-high heat.
- 06Thread marinated chicken pieces onto skewers, packing snugly but not squishing. Reserve leftover marinade.
- 07Grill skewers for 5-6 minutes per side, turning once, until charred in spots and cooked through (internal temp should hit 165°F). Brush once with reserved marinade after the first turn.
- 08Transfer skewers to a platter, tent loosely with foil, and let rest for 5 minutes before serving.
- 09Serve hot, drizzled generously with the parsley-lemon sauce. Scatter extra chopped parsley on top if desired.
