Instructions

  1. 01
In a large bowl, whisk together 1/2 cup parsley, zest and juice of 1 lemon, 3 tbsp olive oil, 2 cloves minced garlic, smoked paprika, dried oregano, honey, ground cumin, 1 1/2 tsp kosher salt, and 1 tsp black pepper.
  2. 02
Add the chicken pieces to the marinade. Toss until evenly coated. Let sit at room temperature for 20 minutes while you prep the grill.
  3. 03
If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.
  4. 04
Meanwhile, make the parsley-lemon sauce: In a food processor, combine remaining 1/2 cup parsley, zest and juice of the second lemon, 2 tbsp olive oil, remaining 2 cloves garlic, 1/2 tsp salt, 1/2 tsp black pepper, red pepper flakes, and 2 tbsp water. Process until smooth but still vibrant.
  5. 05
Preheat a grill or grill pan to medium-high heat.
  6. 06
Thread marinated chicken pieces onto skewers, packing snugly but not squishing. Reserve leftover marinade.
  7. 07
Grill skewers for 5-6 minutes per side, turning once, until charred in spots and cooked through (internal temp should hit 165°F). Brush once with reserved marinade after the first turn.
  8. 08
Transfer skewers to a platter, tent loosely with foil, and let rest for 5 minutes before serving.
  9. 09
Serve hot, drizzled generously with the parsley-lemon sauce. Scatter extra chopped parsley on top if desired.
