Instructions

  1. 01
Lay out 2 tortillas on a clean surface. Evenly sprinkle each with 1/2 cup mozzarella, 12 pepperoni slices, and 1/4 cup chopped basil.
  2. 02
Top with the remaining tortillas to form 2 quesadillas. Press gently to flatten.
  3. 03
Heat 1 tbsp olive oil in a large nonstick skillet over medium heat. Place one quesadilla in the skillet and cook until the bottom is golden and crisp, about 2-3 minutes.
  4. 04
Flip the quesadilla and cook the other side for another 2-3 minutes, until golden and the mozzarella is fully melted. Transfer to a cutting board and repeat with the second quesadilla, using the remaining 1 tbsp olive oil.
  5. 05
While the quesadillas cook, warm the pizza sauce in a small saucepan over low heat, stirring occasionally.
  6. 06
Slice each quesadilla into quarters. Arrange on plates and drizzle generously with the warmed pizza sauce.
  7. 07
Serve immediately, garnished with a few extra basil leaves if desired. Season with salt and pepper to taste.
