- 01Lay out 2 tortillas on a clean surface. Evenly sprinkle each with 1/2 cup mozzarella, 12 pepperoni slices, and 1/4 cup chopped basil.
- 02Top with the remaining tortillas to form 2 quesadillas. Press gently to flatten.
- 03Heat 1 tbsp olive oil in a large nonstick skillet over medium heat. Place one quesadilla in the skillet and cook until the bottom is golden and crisp, about 2-3 minutes.
- 04Flip the quesadilla and cook the other side for another 2-3 minutes, until golden and the mozzarella is fully melted. Transfer to a cutting board and repeat with the second quesadilla, using the remaining 1 tbsp olive oil.
- 05While the quesadillas cook, warm the pizza sauce in a small saucepan over low heat, stirring occasionally.
- 06Slice each quesadilla into quarters. Arrange on plates and drizzle generously with the warmed pizza sauce.
- 07Serve immediately, garnished with a few extra basil leaves if desired. Season with salt and pepper to taste.
