Herb's take
Korean tteokbokki, meet your wildest Italian-American cousin. We're simmering chopped pepperoni pizza and tender rice cakes in a gochujang-peanut butter sauce for a dinner that is spicy, sweet, savory, and unapologetically fusion. You'll learn why peanut butter is a secret umami weapon, and how even leftover pizza can become a hero in a new cuisine.

Instructions
- 01In a large, deep skillet or wide saucepan, combine water, gochujang, peanut butter, rice syrup, soy sauce, and minced garlic. Whisk over medium heat until the gochujang and peanut butter fully dissolve into a smooth, cohesive sauce.
- 02Add the rice cakes to the pan and bring the mixture to a gentle boil. Stir occasionally and let simmer for 10 minutes, or until the rice cakes soften and begin to look glossy.
- 03Add all the chopped pepperoni pizza pieces to the pan, gently submerging them in the sauce. Simmer everything together for another 7 to 10 minutes, stirring once or twice, until the pizza soaks up some sauce and the cheese melts into the mix.
- 04Taste and, if desired, add a pinch of salt; the pizza and gochujang can both be salty, so check before seasoning further.
- 05Divide the tteokbokki between four bowls. Top each serving with a generous sprinkle of scallions and toasted sesame seeds. Serve immediately.
