    In a medium bowl, whisk together white wine vinegar, sugar, and kosher salt until dissolved.

    Add the sliced cucumbers to the bowl, toss well, and let sit for 15 minutes, stirring occasionally.

    Meanwhile, combine diced red onion, extra virgin olive oil, lemon zest and juice, and dijon mustard in a small bowl. Whisk vigorously until emulsified.

    Let the vinaigrette sit for at least 10 minutes so the red onion mellows but retains its bite.

    Drain the pickled cucumbers, discarding excess liquid. Transfer cucumbers to a large mixing bowl.

    Add the halved cherry tomatoes and chopped parsley to the bowl with the cucumbers.

    Pour the red onion vinaigrette over the salad and toss gently to coat everything evenly.
