- 01In a medium bowl, whisk together white wine vinegar, sugar, and kosher salt until dissolved.
- 02Add the sliced cucumbers to the bowl, toss well, and let sit for 15 minutes, stirring occasionally.
- 03Meanwhile, combine diced red onion, extra virgin olive oil, lemon zest and juice, and dijon mustard in a small bowl. Whisk vigorously until emulsified.
- 04Let the vinaigrette sit for at least 10 minutes so the red onion mellows but retains its bite.
- 05Drain the pickled cucumbers, discarding excess liquid. Transfer cucumbers to a large mixing bowl.
- 06Add the halved cherry tomatoes and chopped parsley to the bowl with the cucumbers.
- 07Pour the red onion vinaigrette over the salad and toss gently to coat everything evenly.
- 08Taste and season with additional kosher salt if needed, then serve immediately or chill up to 1 hour for extra flavor melding.
