Portugal may be famous for bacalhau, but piri-piri chicken is the real party trick. Here you’ll master the art of marinating and roasting wings with a fiery, citrusy kick, perfect for sharing, if you’re feeling generous.

- 01In a large bowl, whisk together olive oil, lemon juice, white wine vinegar, minced garlic, smoked paprika, piri-piri sauce, dried oregano, salt, and black pepper until emulsified.
- 02Add the chicken wings and toss thoroughly to coat every surface. Cover and let marinate in the fridge for 20 minutes while you preheat the oven.
- 03Preheat the oven to 450°F and line a large, rimmed baking sheet with foil for easy cleanup.
- 04Arrange the marinated wings in a single layer on the prepared baking sheet, leaving space between each for even roasting.
- 05Roast for 25 minutes, flipping halfway through, until the skin is crisp and the meat is cooked through.
- 06Transfer the wings to a serving platter. Sprinkle with chopped parsley and serve with lemon wedges on the side for squeezing.
