- 01In a medium saucepan, combine apple cider vinegar, water, granulated sugar, kosher salt, black peppercorns, and mustard seeds. Bring to a simmer over medium heat, stirring until the sugar dissolves.
- 02Place the sliced cucumber and diced red onion in a large, heatproof mixing bowl.
- 03Pour the hot pickling liquid over the cucumber and onion mixture. Let stand at room temperature for 20 minutes, tossing occasionally.
- 04Drain the pickled cucumbers and onions well, discarding the excess liquid.
- 05Add the halved cherry tomatoes and fresh chopped dill to the drained slaw. Toss gently to combine.
- 06Season with additional salt and black pepper to taste, then refrigerate for at least 10 minutes before serving.
