- 01Preheat your oven to 425°F. Line a rimmed baking sheet with foil and set a wire rack on top.
- 02In a large bowl, toss the chicken wings with baking powder, kosher salt, and black pepper until evenly coated. Arrange wings in a single layer on the wire rack.
- 03Roast for 40-45 minutes, flipping halfway, until the skin is deep golden and crisp.
- 04While the wings roast, combine cranberry sauce, maple syrup, apple cider vinegar, minced sage, unsalted butter, and garlic powder in a small saucepan over medium heat. Stir until butter melts and glaze is smooth, about 3-5 minutes.
- 05Simmer the glaze gently for 3 minutes to thicken slightly, then remove from heat.
- 06For the blue cheese dip, mix blue cheese, sour cream, mayonnaise, lemon juice, and chives in a bowl until combined. Cover and chill until serving.
- 07When the wings are cooked, transfer them to a large heatproof bowl. Pour the warm cranberry-maple glaze over and toss until evenly coated.
- 08Pile wings onto a platter and serve with the blue cheese dip alongside for dunking.
