    Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.

    Add the italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 7 minutes. Transfer sausage to a plate, leaving drippings in the pot.

    Add the onion, carrot, and celery to the pot and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.

    Stir in the garlic and tomato paste, and cook for 1 minute until fragrant.

    Sprinkle in the dried oregano, dried basil, and crushed red pepper flakes, stirring constantly for 30 seconds.

    Pour in the hand-crushed tomatoes (with their juices) and chicken broth. Stir well, scraping up any browned bits from the bottom.

    Return the browned sausage and any accumulated juices to the pot. Add the diced potato and bring the stew to a gentle boil.

    Reduce heat and simmer, partially covered, for 25 minutes, until the potatoes are tender and the stew is thickened.
