- 01Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.
- 02Add the italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 7 minutes. Transfer sausage to a plate, leaving drippings in the pot.
- 03Add the onion, carrot, and celery to the pot and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
- 04Stir in the garlic and tomato paste, and cook for 1 minute until fragrant.
- 05Sprinkle in the dried oregano, dried basil, and crushed red pepper flakes, stirring constantly for 30 seconds.
- 06Pour in the hand-crushed tomatoes (with their juices) and chicken broth. Stir well, scraping up any browned bits from the bottom.
- 07Return the browned sausage and any accumulated juices to the pot. Add the diced potato and bring the stew to a gentle boil.
- 08Reduce heat and simmer, partially covered, for 25 minutes, until the potatoes are tender and the stew is thickened.
- 09Taste and season with salt and black pepper as needed.
- 10Ladle the stew into bowls and sprinkle with chopped fresh parsley to serve.
