- 01Line a quarter-sized rimmed baking sheet or flat tray (about 9x13 inches) with parchment paper, smoothing out any creases.
- 02In a microwave-safe bowl, combine semisweet chocolate chips and olive oil. Microwave in 20-second bursts, stirring after each, until smooth and glossy, about 1 to 1.5 minutes.
- 03Pour the melted chocolate onto the parchment and spread into an even layer about 1/4 inch thick. Don’t fuss over perfect edges, rustic is the aesthetic goal.
- 04Immediately scatter chopped strawberries evenly over the chocolate. Gently press them in with clean hands.
- 05Sprinkle white chocolate chips over the bark, pressing in lightly so they adhere.
- 06Finish with a dusting of fine sea salt, distributing evenly.
- 07Transfer tray to the freezer and let set for at least 20 minutes, or until solid.
- 08Once fully frozen, break the bark into irregular shards and serve immediately. Store leftovers in a zip-top bag in the freezer.
