    Heat the olive oil in a large skillet over medium-high heat.

    Add the ground beef and cook, breaking it up with a spatula, until well-browned and any liquid has mostly evaporated, about 6-8 minutes.

    Add the diced onion and continue to cook, stirring occasionally, until translucent, about 3 minutes.

    Stir in the minced garlic and cook until fragrant, about 1 minute.

    Toss in the cubed potatoes. Cook, stirring occasionally, until they start to soften and pick up a little color, about 5 minutes.

    Add diced tomatoes, tomato paste, thyme, parsley, and crushed red pepper flakes. Stir well to combine.

    Pour in the beef broth and bring to a simmer. Reduce heat to medium-low, cover the skillet, and let cook for 10-12 minutes until potatoes are cooked through.

    Uncover and continue to simmer, stirring occasionally, until most liquid has evaporated and the mixture is thick and hash-like, about 3-5 more minutes.
