Inspired by the Italian countryside’s peasant fare, this skillet hash transforms humble ingredients into a comforting, flavor-packed dinner. You'll master the art of coaxing maximum depth from simple ground beef and tomatoes, all in one pan, and all with glorious, garlicky pan sauce.

- 01Heat the olive oil in a large skillet over medium-high heat.
- 02Add the ground beef and cook, breaking it up with a spatula, until well-browned and any liquid has mostly evaporated, about 6-8 minutes.
- 03Add the diced onion and continue to cook, stirring occasionally, until translucent, about 3 minutes.
- 04Stir in the minced garlic and cook until fragrant, about 1 minute.
- 05Toss in the cubed potatoes. Cook, stirring occasionally, until they start to soften and pick up a little color, about 5 minutes.
- 06Add diced tomatoes, tomato paste, thyme, parsley, and crushed red pepper flakes. Stir well to combine.
- 07Pour in the beef broth and bring to a simmer. Reduce heat to medium-low, cover the skillet, and let cook for 10-12 minutes until potatoes are cooked through.
- 08Uncover and continue to simmer, stirring occasionally, until most liquid has evaporated and the mixture is thick and hash-like, about 3-5 more minutes.
- 09Taste and season generously with salt and black pepper. Scatter extra parsley over the top before serving.
- 10Serve hot, straight from the skillet, with thick slices of crusty bread for mopping up all the juicy bits.
