Rustic Tomato-Potato Hash with Onion Gravy

- 01Melt 2 tablespoons butter with 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium heat.
- 02Add the cubed potatoes and sprinkle with a little salt. Cook, stirring occasionally, until golden and almost tender, about 12 minutes.
- 03Stir in the smoked paprika and half the thyme. Cook 1 minute, then add the diced tomatoes and cook until the tomatoes soften and their juices mostly evaporate, 5-7 minutes.
- 04Scrape the vegetable mixture onto a plate and loosely cover to keep warm.
- 05Wipe out the skillet. Add remaining olive oil, then toss in the sliced onions and sugar. Cook over medium heat, stirring frequently, until very soft and deeply golden, 10-12 minutes.
- 06Add the minced garlic and cook 1 minute until fragrant.
- 07Sprinkle the flour over the onions and stir to coat. Cook 1-2 minutes until the raw flour smell disappears.
- 08Gradually whisk in the chicken broth, scraping up any browned bits. Simmer until thickened and glossy, about 3-4 minutes.
- 09Stir in the red wine vinegar and season the gravy with salt and pepper to taste.
- 10Return the potato-tomato mixture to the skillet with the gravy. Toss gently to combine and heat everything through, about 2 minutes.
- 11Off heat, stir in the remaining butter and sprinkle with parsley and the rest of the thyme. Serve hot, preferably with a fried egg on top if you’re into that sort of thing.
