Rustic Tomato-Potato Hash with Onion Gravy

Inspired by classic American diner breakfasts, this skillet hash gets a dinner-worthy upgrade with a rich, deeply savory onion gravy. Along the way, you’ll master the art of crisping potatoes and coaxing sweetness from onions, because science says browning equals flavor.

    Melt 2 tablespoons butter with 1 tablespoon olive oil in a large nonstick or cast-iron skillet over medium heat.

    Add the cubed potatoes and sprinkle with a little salt. Cook, stirring occasionally, until golden and almost tender, about 12 minutes.

    Stir in the smoked paprika and half the thyme. Cook 1 minute, then add the diced tomatoes and cook until the tomatoes soften and their juices mostly evaporate, 5-7 minutes.

    Scrape the vegetable mixture onto a plate and loosely cover to keep warm.

    Wipe out the skillet. Add remaining olive oil, then toss in the sliced onions and sugar. Cook over medium heat, stirring frequently, until very soft and deeply golden, 10-12 minutes.
