This Italian-inspired dinner classic is proof that sometimes dinner is just eggs, elevated. You’ll learn how to coax custardy, cheesy texture out of humble pantry staples.

- 01Preheat your oven to 400°F. Generously butter a 2-quart shallow baking dish.
- 02In a small saucepan over medium heat, melt 4 tablespoons of butter. Whisk in the flour and cook, stirring constantly, for 1 minute.
- 03Slowly whisk in the water until smooth and slightly thickened, about 2 minutes. Remove from heat.
- 04Crack all 8 eggs into the baking dish, keeping the yolks intact if possible.
- 05Pour the warm roux mixture evenly over the eggs. Sprinkle black pepper all over, then scatter the grated parmesan on top.
- 06Dot the remaining 2 tablespoons of butter over the surface.
- 07Bake, uncovered, for 13-16 minutes, until whites are just set and yolks are still a little jiggly.
- 08Let rest 3 minutes before serving. Spoon generous portions onto plates, making sure everyone gets gooey yolk and plenty of crispy cheese.
