Ready your wok: this classic Chinese stir-fry is a weeknight dinner hero with rich fermented black bean funk, crisp broccoli, and juicy ground beef. You’ll master wok hei and the mystical art of velveting (yes, really) in the time it takes to order takeout.

    In a small bowl, mix 1 tablespoon soy sauce, 1 teaspoon cornstarch, and the ground beef until combined. Let sit 10 minutes.

    Combine black bean sauce, remaining soy sauce, sugar, the rest of the cornstarch, and water in a second bowl to make the stir-fry sauce. Stir well to dissolve cornstarch.

    Heat 2 tablespoons oil in a large wok or skillet over high heat until shimmering. Add broccoli and stir-fry 2 minutes until bright green. Add 2 tablespoons water, cover, and steam 1 minute until just tender. Transfer broccoli to a plate.

    Add remaining oil to the wok. Add ground beef and spread into a single layer. Let cook undisturbed 1 minute, then stir-fry until browned and mostly cooked, about 2 more minutes.

    Push beef to the edges. Add garlic and ginger to center; stir-fry 30 seconds until fragrant.

    Return broccoli to the pan. Add sauce mixture. Toss everything rapidly until sauce thickens and coats, about 1 minute.
