Let’s take a page from French comfort food, but instead of sugar and vanilla, we’re tossing in the bold, aromatic flavors of bagel spices. This dish is a crash course in how eggs, dairy, and bread morph into something greater than the sum of their parts, plus you’ll learn why a crunchy top is non-negotiable.

    Preheat your oven to 350°F. Grease a 9x13-inch baking dish with 1 tablespoon of the melted butter.

    Spread the bread cubes on a rimmed baking sheet and toast in the oven for 8–10 minutes, just until lightly crisped but not browned.

    In a skillet over medium heat, melt the remaining 3 tablespoons butter. Add onion and cook until softened, about 5 minutes. Stir in the garlic and cook 1 minute more. Remove from heat.

    In a large mixing bowl, whisk together eggs, milk, cream, Dijon mustard, 2 tablespoons bagel spices, salt, and pepper until smooth.

    Stir in both cheeses and most of the chives, reserving a pinch for garnish.

    Add the toasted bread cubes and sautéed onion mixture to the custard, tossing well to coat. Let stand 10 minutes so the bread absorbs the liquid.

    Transfer the mixture to the prepared baking dish, patting it in evenly. Sprinkle the remaining 1 tablespoon bagel spices over the top.

    Bake uncovered for 40–45 minutes, until puffed and the top is golden brown.
