Savory Egg and Cheese Bread Pudding with Bagel Spices

Let’s take a page from French comfort food, but instead of sugar and vanilla, we’re tossing in the bold, aromatic flavors of bagel spices. This dish is a crash course in how eggs, dairy, and bread morph into something greater than the sum of their parts, plus you’ll learn why a crunchy top is non-negotiable.

- 01Preheat your oven to 350°F. Grease a 9x13-inch baking dish with 1 tablespoon of the melted butter.
- 02Spread the bread cubes on a rimmed baking sheet and toast in the oven for 8–10 minutes, just until lightly crisped but not browned.
- 03In a skillet over medium heat, melt the remaining 3 tablespoons butter. Add onion and cook until softened, about 5 minutes. Stir in the garlic and cook 1 minute more. Remove from heat.
- 04In a large mixing bowl, whisk together eggs, milk, cream, Dijon mustard, 2 tablespoons bagel spices, salt, and pepper until smooth.
- 05Stir in both cheeses and most of the chives, reserving a pinch for garnish.
- 06Add the toasted bread cubes and sautéed onion mixture to the custard, tossing well to coat. Let stand 10 minutes so the bread absorbs the liquid.
- 07Transfer the mixture to the prepared baking dish, patting it in evenly. Sprinkle the remaining 1 tablespoon bagel spices over the top.
- 08Bake uncovered for 40–45 minutes, until puffed and the top is golden brown.
- 09Let rest 10 minutes before slicing. Garnish with remaining chives and serve warm.
