- 01In a small bowl, mix the rice vinegar and sugar until dissolved, then add the carrot, cucumber, and radishes. Let sit while you prepare the beef.
- 02Heat the neutral oil in a large skillet over medium-high heat. Add the onion and cook until translucent, about 2 minutes.
- 03Add the garlic and stir for 30 seconds until fragrant.
- 04Add the ground beef, breaking it up with a spatula, and cook until browned and cooked through, about 5-6 minutes. Drain excess fat if needed.
- 05Pour in the BBQ sauce and soy sauce, stirring to coat the beef evenly. Simmer for 2 minutes until thickened and glossy.
- 06Stir in the sesame oil and remove from the heat.
- 07Drain the pickled veggies.
- 08To serve, spoon BBQ beef into each lettuce leaf. Top with a generous pile of pickled vegetables, then sprinkle with scallions and sesame seeds.
