
Eggs Over Easy, Rice Over Everything

- 01Heat 2 tablespoons of neutral oil in a large skillet or wok over medium-high heat. Add the diced onion and a pinch of salt. Cook, stirring occasionally, until onion is deeply golden and beginning to caramelize, about 7-10 minutes.
- 02Sprinkle the sugar over the onions and continue to cook for 1 minute, stirring, until the onions are sticky and sweet.
- 03Push onion to the edges of the pan. Add the remaining 1 tablespoon oil to the center. Crack in the eggs. Scramble gently until just set but slightly runny, about 1 minute.
- 04Add the cooked, cooled rice to the pan. Break up clumps with your spatula and toss everything together, mixing thoroughly with the eggs and onions.
- 05Increase heat to high. Stir-fry for 3-4 minutes until the rice is hot and a few grains are crisping on the bottom. Season generously with salt and black pepper to taste.
- 06Drizzle the white vinegar over the rice and toss well. Taste and adjust seasoning as needed.
- 07Serve immediately, with another grind of black pepper if you like.
