Savory Onion and Egg Fried Rice for Dinner

Fried rice is the ultimate culinary remix: humble, resourceful, and endlessly customizable. Tonight, you'll master the science of transforming eggs, onion, and rice into a surprisingly craveable dinner.

    Spread the cooked rice out on a baking sheet and let it sit while you prep the other ingredients.

    In a small bowl, beat the eggs with a pinch of salt and black pepper until homogenous.

    Heat 1 tablespoon of oil in a large nonstick skillet or wok over medium-high heat. Add the onion and cook, stirring, for 3-4 minutes until translucent and just starting to brown. Sprinkle in the sugar and continue cooking for 1 more minute to help the onion caramelize.

    Push the onion to the side. Add another tablespoon of oil to the empty space, then pour in the beaten eggs. Let them sit for 30 seconds, then gently scramble until just set but still moist. Transfer eggs to a plate.

    Add the remaining tablespoon of oil to the skillet and crank the heat to high. Add the rice and spread it out. Let it sit undisturbed for 1 minute to crisp up, then stir and repeat a couple times.

    Sprinkle the paprika, garlic powder, and another pinch of black pepper over the rice. Add the sautéed onions back to the pan and toss to combine well.

    Return the eggs to the pan and fold gently to incorporate.

    Taste and adjust seasoning with salt and black pepper as needed. Serve immediately.
