Inspired by Mediterranean street food, this quick flatbread pairs punchy garlic with juicy tomatoes in a topping that's both simple and sensational. You'll learn how to make an easy yeasted dough and coax maximum flavor out of pantry spices.

    In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.

    Add 1 tablespoon olive oil and a big pinch of salt, then stir in flour gradually to form a soft dough.

    Knead on a floured surface for 5 minutes until smooth and elastic.

    Place dough in an oiled bowl, cover, and let rise in a warm spot for 30 minutes or until doubled in size.

    While the dough rises, combine diced tomatoes, minced garlic, oregano, paprika, 1 tablespoon olive oil, a pinch of salt, and black pepper in a bowl. Stir well.

    Preheat oven to 450°F. If you have a baking stone, now is its time to shine.

    Punch down the dough and stretch it onto a well-oiled baking sheet to about 1/4 inch thick.
