Savory Tuna and Onion Crepes with Fermented-Chile Chocolate Sauce

Jianbing, China’s breakfast-on-the-go superstar, goes off-script here with a savory tuna-onion filling and a punchy, glossy chocolate-chile sauce. We're folding in a bit of culinary mayhem and showing you how chocolate, spice, and alliums can play nice in a crispy, street-food package.

- 01In a medium bowl, whisk together the flour, cold water, and egg until you have a smooth, pourable batter.
- 02Let the batter rest for 15 minutes at room temperature.
- 03Meanwhile, in another bowl combine the drained tuna, diced onion, and sliced scallions. Add soy sauce and mix gently to combine.
- 04Heat 1 tablespoon of neutral oil in a nonstick 10- or 12-inch skillet over medium heat. Pour in about 1/3 cup of batter, immediately swirling and tilting to coat the bottom in a thin layer.
- 05Cook for about 1 minute, until the edges look dry and the bottom is lightly golden. Scatter a quarter of the tuna-onion mixture evenly over the surface. Gently press it into the batter with a spatula.
- 06Using a wide spatula, carefully flip the crepe so the filling side is down. Cook for another 1-2 minutes, until the tuna-onion side is lightly crisped.
- 07Slide the cooked crepe to a plate and cover loosely with foil. Repeat with remaining oil, batter, and filling to make 4 crepes.
- 08While the crepes cook, make the sauce: In a small saucepan over low heat, combine the chopped chocolate, fermented chile paste, rice vinegar, sugar, and 2 tablespoons water. Stir constantly until the chocolate is melted and the mixture is glossy and smooth, about 2-3 minutes.
- 09Remove the pan from heat and stir in the toasted sesame oil.
- 10To serve, fold each crepe into quarters or roll burrito-style, drizzle generously with the chocolate-chile sauce, and garnish with extra scallions if desired. Season with salt and pepper to taste.
