This contemporary American salad is a celebration of everything leafy and lively: you'll learn how to turn a jumble of garden herbs and greens into a restaurant-worthy composed salad, with nasturtium working double duty as both greens and a spicy-sweet vinaigrette infusion. It's what would happen if your backyard got a degree in salad engineering.

- 01Preheat oven to 400°F. Pat the chicken breasts dry with paper towels, then season both sides with 1 1/2 teaspoons salt and 1/2 teaspoon black pepper.
- 02Heat 1 tablespoon olive oil in a large skillet over medium-high until shimmering. Add chicken breasts and sear for 2 minutes per side until golden brown.
- 03Transfer chicken to a foil-lined baking sheet and roast for 12 to 14 minutes, until internal temperature hits 160°F. Rest on a cutting board for 10 minutes before shredding with two forks.
- 04While chicken roasts, prepare the nasturtium vinaigrette: In a small bowl, combine minced shallot and white wine vinegar. Let stand 3 minutes for the shallot to mellow.
- 05Finely chop 2/3 cup of the nasturtium leaves and flowers. Add to the shallot-vinegar mixture with honey and Dijon mustard, whisking to combine.
- 06Slowly drizzle in the remaining 3 tablespoons olive oil, whisking vigorously, until the vinaigrette is emulsified. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
- 07In a large salad bowl, combine mustard greens, basil, mint, and purslane. Toss gently to mix.
- 08Add shredded chicken to the bowl and drizzle with about half the nasturtium vinaigrette. Toss just until coated. Taste and add more vinaigrette, salt, or pepper if needed.
- 09Divide salad among plates. Garnish generously with remaining nasturtium leaves and flowers for color and peppery bite.
- 10Serve immediately, passing extra vinaigrette at the table.
