Instructions

    Crack the eggs into a large bowl and whisk with the milk until completely blended and lightly frothy.

    Melt the butter in a 10- or 12-inch nonstick skillet over medium-low heat until foaming.

    Pour the egg mixture into the skillet. Stir gently and constantly with a spatula, scraping the bottom and sides as curds form.

    When the eggs are mostly set but still a bit glossy and loose, remove the skillet from the heat.

    Sprinkle the Parmesan evenly over the eggs. Cover the skillet with a lid and let sit off-heat for 2 minutes for the cheese to melt in a blanket over the eggs.

    Uncover, sprinkle with parsley, and season generously with salt and black pepper. Serve directly from the skillet or transfer to warm plates.
