Inspired by global comfort food classics, this one-pan wonder transforms humble chicken and rice into something you'll actually look forward to. Expect a little science, a lot of flavor, and zero unnecessary dishes.

- 01Pat the chicken dry and season all over with paprika, cumin, oregano, garlic powder, onion powder, and a generous pinch of black pepper.
- 02Heat the cooking oil in a large skillet (with lid) over medium-high heat. Brown the chicken on both sides until golden, about 3-4 minutes per side. Remove chicken to a plate.
- 03Add the rice to the same skillet and toast, stirring frequently, for 2 minutes until it smells nutty.
- 04Pour in 3 cups of water and 1 1/2 teaspoons salt, scraping up any browned bits from the bottom.
- 05Nestle the browned chicken pieces into the rice. Bring to a simmer, then cover and reduce heat to low.
- 06Cook, covered, for 20-25 minutes until the rice is tender and chicken is cooked through.
- 07Remove from heat and let rest, covered, for 5 minutes before serving. Fluff the rice and serve hot.
