Sliced Sausage and Sweet Onion Stir-Fry Over Wine-Infused Parmesan Rice

- 01In a medium saucepan over medium heat, melt 2 tablespoons of butter. Add the rice and cook, stirring, for 2 minutes until the grains are glossy and smell nutty.
- 02Pour in the white wine. Stir and let it simmer until the wine has mostly evaporated, about 2 minutes.
- 03Add 2 cups water and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes to finish steaming.
- 04While the rice cooks, heat olive oil in a large nonstick skillet over medium-high heat. Add sliced sausage and cook until browned on both sides, about 4–5 minutes. Remove sausage to a plate.
- 05Add the remaining 1 tablespoon butter to the pan. Add sliced onion and cook, stirring often, until soft and caramelized, 8–10 minutes.
- 06Add the minced garlic and cook 1 minute, stirring, until fragrant.
- 07Return sausage to the skillet and toss to combine with the onions and garlic. Cook for 1 more minute to heat through.
- 08Fluff the finished rice with a fork. Stir in the Parmesan cheese until melted and creamy.
- 09Taste both rice and sausage mixture, then season with salt and pepper as needed.
- 10To serve, spoon a generous mound of Parmesan rice onto each plate, top with the sausage and onion stir-fry, and sprinkle with fresh parsley if using.
