Bobotie is South Africa’s answer to comfort food, a casserole that’s part pie, part pudding, and all flavor. Here, you’ll learn the magic of balancing spices, sweetness, and the gentle alchemy of an oven-finished custard.

- 01Preheat your oven to 350°F and grease a 2-quart baking dish.
- 02Tear the bread into small pieces and soak in 1/2 cup of the milk until thoroughly soft, about 5 minutes.
- 03Heat the vegetable oil in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes.
- 04Stir in the garlic, curry powder, turmeric, coriander, cumin, and cinnamon. Cook until fragrant, about 1 minute.
- 05Add the grated carrots and apples. Cook, stirring, until softened, about 3 minutes.
- 06Push the vegetables to the side and add the finely chopped chicken. Cook, stirring to break up clumps, until no longer pink, about 6 minutes.
- 07Pour in the soaked bread and milk, apricot jam, raisins, lemon zest, lemon juice, chutney, salt, and black pepper. Mix thoroughly and simmer for 3 minutes to let flavors meld.
- 08Taste and adjust for salt, pepper, or lemon if needed. Remove from heat.
- 09Transfer the chicken-carrot mixture to the prepared baking dish, smoothing the top.
- 10In a medium bowl, whisk together eggs with the remaining 3/4 cup milk until smooth.
- 11Pour the egg-milk custard evenly over the filling and tuck the bay leaves decoratively into the top.
- 12Bake, uncovered, for 35–40 minutes, until the custard is just set and lightly golden.
- 13Remove from oven and let rest 10 minutes before serving.
- 14Scatter with toasted slivered almonds before serving. Spoon onto plates and enjoy!
