Spanish Grilled Beef and Onion Skewers with Smoked Paprika

These beef and onion skewers are a celebration of Spanish tapas culture: smoky, herby, and perfect for sharing. You'll master the art of marinating with pimentón and coaxing sweet, charred flavor from humble onions on a grill or grill pan.

- 01In a large bowl, combine olive oil, smoked paprika, minced garlic, sherry vinegar, rosemary, parsley, kosher salt, and black pepper. Whisk until well mixed.
- 02Add beef cubes and onion chunks to the marinade. Toss thoroughly to coat, cover, and let sit at room temperature for 20 minutes.
- 03While the beef marinates, soak 8 wooden skewers in water, or set out metal skewers.
- 04Thread the beef and onion alternately onto the skewers, starting and ending with beef. Each skewer should have about 3 pieces of beef and 2 pieces of onion.
- 05Preheat a grill or grill pan over medium-high heat until hot. Lightly oil the grates.
- 06Grill the skewers for 2-3 minutes per side, turning so all sides get nice char marks, until beef is just cooked through and onions are caramelized at the edges.
- 07Transfer skewers to a platter and let rest 3 minutes before serving.
- 08Sprinkle with a little extra parsley and squeeze lemon wedges over the top just before eating.
- 09Serve immediately, tapas-style, with extra lemon wedges on the side.
