This dinner is a riff on Mexican rice bowls, using pantry spices to transform simple ingredients into something craveable. You'll learn how to layer flavor into ground beef and why avocado belongs right at the end.

Instructions
- 01Rinse the rice under cold water until the water runs mostly clear, then drain well.
- 02In a medium saucepan, combine the rinsed rice and 3 cups water. Bring to a boil over medium-high heat, then reduce to a simmer, cover, and cook until water is absorbed and rice is tender, about 15 minutes. Remove from heat and let rest, covered, for 10 minutes. Fluff with a fork.
- 03While the rice cooks, heat 2 tablespoons cooking oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking up with a spoon, until well browned and cooked through, about 6-8 minutes.
- 04Drain any excess fat if needed, return the skillet to heat, and sprinkle the beef with paprika, cumin, chili powder, oregano, garlic powder, onion powder, cayenne, and sugar. Stir and cook for 1 minute until fragrant.
- 05Pour in 2 teaspoons white vinegar and stir well, scraping the bottom of the pan to catch any browned bits. Season with salt and black pepper to taste.
- 06To serve, divide the rice among 4 bowls. Top each with a generous spoonful of spiced beef.
- 07Scatter diced avocado over each bowl just before eating, and sprinkle with a pinch of salt and pepper.
