This is a one-pan Mexican-inspired dinner that brings together lean ground turkey and Rotel for a fast, flavor-packed meal. You'll practice blooming spices and reducing for intensity, all with pantry basics.

- 01Heat oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spatula, until mostly browned, about 4 minutes.
- 02Sprinkle chili powder, cumin, paprika, oregano, garlic powder, onion powder, cayenne, and a big pinch of salt and black pepper over the turkey. Stir for 1 minute until fragrant.
- 03Pour in the entire can of Rotel with its juices and add the sugar. Stir well, scraping up any browned bits.
- 04Bring to a simmer. Cook uncovered, stirring occasionally, until the mixture thickens and most of the liquid has reduced, about 10 minutes.
- 05Taste, then stir in vinegar and adjust salt and pepper as needed.
- 06Serve hot, straight from the skillet, over rice, in tortillas, or with a side of crusty bread if you have it.
