Inspired by East African spiced desserts, this rice sorbet swirls ground ginger and cloves into a creamy, not-too-sweet frozen treat. You'll learn how to harness your blender and some rapid chilling to transform humble rice into a sorbet with serious flavor science.

Instructions
- 01Combine water, sugar, ginger, and whole cloves in a small saucepan. Bring to a simmer over medium heat, stirring to dissolve sugar, and simmer for 3 minutes.
- 02Remove from heat and let the syrup sit for 2 minutes, then strain out the ginger and cloves using a fine mesh strainer into a bowl.
- 03Add the cooled rice, strained spiced syrup, lemon juice, and salt to a blender. Blend on high for 1-2 minutes until completely smooth and creamy.
- 04Pour the mixture into a large shallow metal baking pan and spread evenly. Place in the freezer for 15 minutes until edges are just set.
- 05Scrape the frozen mixture with a fork, then return to blender and blend again until smooth.
- 06Scoop into small bowls and serve immediately, or freeze for up to 10 minutes more for a firmer texture. Garnish with a fresh mint leaf if you’re feeling fancy.
