    Place the finely chopped dark chocolate in a medium heatproof bowl.

    In a small saucepan over medium heat, bring the heavy cream just to a simmer, small bubbles forming around the edge but not boiling.

    Immediately pour the hot cream over the chocolate and let it sit undisturbed for 2 minutes.

    Add the cubed butter and Heinz A1 sauce to the bowl.

    Using a spatula, stir the mixture from the center outward until fully smooth and glossy.

    Stir in the cayenne pepper and kosher salt until evenly combined.

    Cover the bowl with plastic wrap, gently pressing it onto the surface of the ganache, and chill for 45 minutes to 1 hour, until firm enough to scoop.

    Line a baking sheet with parchment. Using a small spoon or melon baller, scoop portions of ganache (about 1 tablespoon each) and roll quickly between your palms to form balls. If the ganache gets too soft, chill your hands or pop the bowl back in the fridge for a few minutes.
