- 01Heat 1 tablespoon oil in a large skillet over medium heat. Add the diced onion and cook for 3 minutes, stirring often, until starting to soften.
- 02Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5 minutes. Drain excess fat if needed.
- 03Push the beef and onion mixture to one side. Add the remaining 1 tablespoon oil and potatoes to the empty side. Spread in a single layer and cook undisturbed for 3 minutes to brown.
- 04Stir everything together and add the minced garlic, smoked paprika, and cayenne. Cook for 1 minute until fragrant.
- 05Cover and cook for 4 minutes, stirring once, until the potatoes are just tender.
- 06Uncover, increase heat to medium-high, and let the hash crisp for another 3 minutes, stirring once for even browning.
- 07Drizzle BBQ sauce and hot sauce over the hash. Stir well and cook for 2 minutes, until everything is glossy and caramelized.
- 08Taste and season generously with salt and black pepper.
- 09In a separate nonstick skillet, fry the eggs sunny-side-up to your liking.
- 10Divide hash among four plates and top each with a fried egg. Sprinkle with chives and serve hot.
