- 01Heat a large skillet over medium-high. Add 1 tablespoon canola oil, then add the ground beef, breaking it up with a spoon. Brown for 4-5 minutes until no longer pink. Transfer beef to a bowl and drain excess fat.
- 02Reduce heat to medium. Add remaining 1 tablespoon canola oil along with diced onion and jalapeño. Sauté for 2-3 minutes until soft.
- 03Add garlic, cumin, chili powder, and smoked paprika. Stir constantly for 30 seconds until fragrant.
- 04Return beef to the skillet. Stir in tomato paste, drained diced tomatoes, 1 teaspoon kosher salt, and black pepper. Cook for 4 minutes, stirring occasionally.
- 05Taste and adjust with additional salt if needed.
- 06Remove from heat and let the beef mixture rest for 3 minutes.
- 07While beef rests, wrap corn tortillas in a clean, damp kitchen towel and microwave for 40 seconds until warm and pliable.
