- 01Heat the neutral oil in a large nonstick skillet over medium-high heat. Add the ground turkey and sprinkle with salt. Break up the meat and brown until just cooked through, about 4 minutes.
- 02Scoot the turkey to one side. Add the garlic and ginger to the cleared space and cook, stirring, for 30 seconds until fragrant.
- 03Pour in the Rotel (with juices), soy sauce, and brown sugar. Stir to combine and simmer for 6–7 minutes, until most of the liquid has reduced and the turkey mixture is thick and saucy.
- 04Off heat, stir in the rice vinegar and sesame oil. Season with salt to taste.
- 05Arrange butter lettuce leaves on a platter. Spoon the warm turkey-rotel mixture into each leaf.
- 06Top with sliced scallions, cilantro, and a sprinkle of crushed peanuts. Serve immediately.
