Dumpling night, but make it science: you'll learn how steam locks in flavor while keeping beef juicy and broccoli vibrant. This is the sort of gentle cooking Chinese grandmothers, and nerds like me, swear by.

- 01In a large bowl, combine ground beef, finely chopped broccoli, scallions, soy sauce, ginger, sesame oil, salt, and white pepper. Mix thoroughly until the filling looks sticky and homogeneous.
- 02Lay out wonton wrappers and place about 1 tablespoon of filling in the center of each. Wet the edges with water, fold over, and pinch tightly to seal, forcing out air pockets as you go.
- 03Line a bamboo or metal steamer with parchment or cabbage leaves. Arrange dumplings in a single layer, leaving space between each so steam can circulate.
- 04Bring 1–2 inches of water to a boil in a pot or wok. Set the steamer above the water, cover, and steam dumplings for 7–8 minutes until wrappers are translucent and beef is cooked through.
- 05Meanwhile, make a quick dipping sauce: Stir together rice vinegar and 1 tablespoon soy sauce in a small bowl.
- 06Transfer steamed dumplings to a platter and serve immediately with dipping sauce.
