If your wing game is stuck in the deep fryer, this is your exit strategy. You’ll pick up the secrets of gently braising wings in a punchy American honey-mustard bath, then broiling to finish with sticky-sweet bravado.

    Preheat oven to 325°F. Pat chicken wings dry with paper towels and season all over with kosher salt and black pepper.

    Heat vegetable oil in a large, oven-safe skillet over medium-high. Sear the wings in batches, turning, until golden brown on both sides, about 5 minutes per batch. Transfer browned wings to a plate.

    Reduce heat to medium. In the same skillet, add onion and cook, stirring occasionally, until softened and starting to turn golden, about 3 minutes.

    Add minced garlic and cook, stirring, for 30 seconds until fragrant.

    Stir in chicken stock, scraping up any browned bits from the pan.

    Whisk in Dijon mustard, whole grain mustard, honey, and apple cider vinegar until smooth and combined.

    Return all wings to the skillet, arranging in a single layer and spooning some sauce over top.

    Cover tightly with a lid or foil and transfer to the oven. Braise until wings are tender and cooked through, about 30 minutes.

    Remove skillet from oven and switch oven to broil (high). Using tongs, transfer wings to a foil-lined baking sheet. (Leave sauce in the skillet.)

    Place skillet with remaining sauce over medium-high heat and simmer until thickened and glossy, 4 to 6 minutes. Whisk in butter until smooth.

    Brush or spoon thickened sauce over wings. Broil wings on the upper rack until caramelized and lightly charred in spots, 2 to 3 minutes, watch closely!

    Transfer wings to a platter. Spoon any remaining glaze over. Sprinkle with chopped parsley and serve with lemon wedges.
