Herb's take
Meet mille-feuille: the lasagna of French patisserie, only sweet, flaky, and much more likely to impress your friends. We’re folding strawberries and chocolate chips into the mix to give a classic new flavor profile, with a quick homemade glaze to top it all off.

Instructions
- 01Preheat oven to 400°F. Line a baking sheet with parchment paper.
- 02Unfold the thawed puff pastry and cut into 12 equal rectangles (about 2 x 4 inches each). Place on the baking sheet.
- 03Beat the egg with 1 tablespoon water. Brush the tops of the pastry rectangles lightly with the egg wash.
- 04Bake for 15 to 18 minutes or until puffed and deep golden brown. Cool completely on a rack.
- 05While the pastry bakes, whip the heavy cream, powdered sugar, and vanilla extract together in a chilled bowl until stiff peaks form.
- 06Gently fold in the diced strawberries and chocolate chips until evenly distributed.
- 07For the glaze: In a small bowl, whisk together the milk and remaining powdered sugar until you have a thick, pourable glaze.
- 08Carefully split each cooled pastry rectangle in half horizontally with a serrated knife, creating 24 thin layers.
- 09To assemble: On a serving plate, layer one pastry piece, then spread 2 to 3 tablespoons of the strawberry-chocolate chip cream over it. Repeat twice, finishing with a third piece of pastry. Each stack will use 3 pastry layers.
- 10Drizzle glaze over the top layer of each stack. Garnish with extra strawberry slices and a sprinkle of chocolate chips if desired.
- 11Chill assembled mille-feuille for at least 20 minutes before serving to set the cream and make slicing easier.
