- 01Preheat oven to 350°F. Line a baking sheet with parchment paper.
- 02In a bowl, toss oats with melted butter, brown sugar, and salt until evenly coated. Spread onto the prepared sheet in a single layer. Bake 12-15 minutes, stirring halfway, until golden and fragrant. Cool completely.
- 03While oats cool, place chocolate chips in a microwave-safe bowl. Heat in 20-second bursts, stirring between each, until just melted and glossy.
- 04In a separate bowl, mix Greek yogurt with honey and vanilla extract until smooth.
- 05To assemble, spoon 2 tablespoons toasted oat crumble into the bottom of each tall glass. Layer with 1/4 cup yogurt mixture, then a layer of sliced strawberries. Repeat layers, finishing with yogurt and a generous sprinkle of oat crumble on top.
- 06Drizzle melted chocolate over the parfaits just before serving.
