Tex-Mex at its most minimalist: ground turkey, Rotel, and a pantry's worth of dried spices for a lightning-fast, flavor-forward skillet supper. It's a one-pan dinner that lets you practice blooming, reducing, and seasoning all in under half an hour.

- 01Heat the oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until most of the pink is gone, about 4 minutes.
- 02Sprinkle in the chili powder, cumin, paprika, oregano, garlic powder, onion powder, and cayenne. Cook for 1 minute, stirring constantly, until fragrant.
- 03Pour in the entire can of Rotel, including the juices. Add sugar and stir to combine. Bring to a simmer.
- 04Reduce heat to medium. Let the mixture cook, stirring occasionally, until most of the liquid has evaporated and the turkey is fully cooked, about 8-10 minutes.
- 05Taste and season with salt and black pepper as needed. Serve hot, straight from the skillet.
