Herb's take

Inspired by Italian antipasti but fully American at heart, this playful platter turns leftovers into an artful dinner. You’ll learn to make a fast herb-infused oil for drizzling, a restaurant trick that transforms anything into ‘fancy food’ territory.

Instructions

  1. 01
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment.
  2. 02
Arrange the halved dinner rolls cut-side up on the sheet. Brush lightly with 2 tablespoons of the olive oil. Bake for 8 to 10 minutes until golden and crisp.
  3. 03
While the rolls toast, combine remaining olive oil, garlic, parsley, chives, and basil in a small saucepan. Set over very low heat for 5 minutes to gently infuse the oil. Remove from heat, discard garlic, and let cool slightly.
  4. 04
Microwave the leftover mac and cheese in a large bowl, covered, until hot and creamy, about 2 to 3 minutes. Stir well.
  5. 05
Arrange toasted roll halves on a large platter. Using a scoop or large spoon, place a mound of hot mac and cheese next to or atop each roll half.
  6. 06
Drizzle the warm herb oil over the mac and cheese and rolls.
  7. 07
Sprinkle lemon zest evenly over the platter and garnish with extra chopped herbs if desired. Season everything with salt and pepper to taste.
  8. 08
Serve immediately, letting everyone build their own perfect bite.
