Tomato-Garlic Baked Salmon over Savory Rice

Inspired by Mediterranean comfort food, this all-in-one dinner bakes salmon with a quick tomato-garlic sauce and serves it atop aromatic rice. You'll learn why blooming spices and resting rice matter for flavor and texture.

- 01Preheat your oven to 400°F.
- 02In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Add half the chopped onion and cook until softened, about 3 minutes.
- 03Add half the minced garlic and sauté for 30 seconds until fragrant.
- 04Add the rinsed rice, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir to coat the grains in oil.
- 05Pour in 2.5 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 10 minutes before fluffing with a fork.
- 06While the rice cooks, heat the remaining 2 tablespoons olive oil in a skillet over medium heat. Add remaining onion and cook until translucent, about 4 minutes.
- 07Add remaining garlic, diced tomatoes, oregano, paprika, sugar, and 1 teaspoon salt. Simmer, stirring occasionally, until thickened and slightly reduced, about 8 minutes.
- 08Pat salmon fillets dry with paper towels. Season both sides with 1/2 teaspoon black pepper. Arrange in a single layer in a baking dish.
- 09Spoon the tomato-garlic sauce evenly over the salmon.
- 10Bake in preheated oven until salmon is just opaque in the center and flakes easily with a fork, about 14–16 minutes depending on thickness.
- 11To serve, fluff the rice and divide it among plates. Top each portion with a salmon fillet and plenty of sauce.
